Brilliant Basics (Cooking Methods & Techniques)
If you want to learn how to cook in Sydney, then this course is for you.
Learn to be a confident cook! Each student prepares the recipes with demonstration by the teacher. The class maximum is 8 people for individualised attention, so enrol quickly.
This informative course not only has you making a risotto and au gratin but also cooking onions and steak perfectly. You can also add making a dessert cake and damper fit for your mother-in-law to add to your list of talents. In addition you will learn to read a recipe, how to use a knife along with some cooking terms.
Agenda
During this course the intention is that the following topics will be covered, but not necessarily in the order given. Due to the flexible nature of Adult Education classes, parts of the curriculum may be adapted to suit the needs of the class.
- Learn the basics of recipe reading
- Identify the common cutting techniques used in the preparation of food
- Define and identify the principles of boiling by preparing rice through the absorption method and preparation of stock, risotto, pasta and a sauce
- Define and identify the principles of shallow frying through the preparing of a vegetable au gratin and cooking meat (determining doneness, rare to well done) without cutting meat
- Define and identify the principles used in the technique of rubbing in butter as well as creaming butter and sugar
As a matter of course hints, and suggestions will be discussed and miscellaneous techniques (eg skimming stock) shown throughout the demonstrations.
Objectives
The intended Learning Outcomes for this course are as follows.
By the end of the course the student will have:
- Learned how to prepare the course recipes by following a recipe using the correct procedure
- Learned how to apply the principles for boiling when required in the preparation of food
- Learned how to apply the principles for shallow frying when required in the preparation of food
- Learned the technique of creaming butter and sugar to prepare a cake batter
- Learned the technique of rubbing in butter to prepare damper
- Identified the stages of beaten egg white
- Learned to prepare meringue

Please bring:
- A sharp, minimum 20 cm chef’s knife
- Apron
- Tea towel
- Australian Standard measuring spoon set (20ml tblsp)
- Pen & paper
- Your own cup for tea or coffee.
Leichhardt Campus, Sydney Secondary College (formerly Leichhardt High School) is located on the corner of Balmain Road and Moore Street West. Entry via Derbyshire Street. Onsite parking very limited, some street parking available.
