If you want to learn how to cook South-East Asian food in Sydney then this course is for you.

Widen your repertoire of Asian cooking. Rise above the ordinary and learn to create a selection of lip-smacking, delicious and unusual dishes using freshly made paste of Asian herbs and spices.
You will learn to cook famous Nonya dishes such as:

• Prawn Laksa
• Spicy chicken with kaffir lime leaves;
• Fish with tamarind fruit;
• Pork with five-spice and star anise;
• Vegetables in coconut sauce and fresh turmeric;
• Prawn salad in plum and lemon dressing;
• Beef rendang with dried chillies;
• Curry leaves and galangal and cinnamon chicken with cloves!

Actual dishes cooked will depend on seasonal factors.

At the end of the course you will come to know these Asian herbs and truly appreciate the uniqueness of this cuisine.

Agenda

During this course the intention is that the following topics will be covered, but not necessarily in the order given. Due to the flexible nature of Adult Education classes, parts of the curriculum may be adapted to suit the needs of the class.

• Learning about the spices and their preparation.
• Preparing meat, seafood and vegetables.
• Using Nonya cooking equipment and techniques.
• Preparing delicious Nonya dishes.

Objectives

By the end of the course the student will have:

• Appreciated the traditions of Nonya cooking and been able to discern Nonya dishes from Chinese and Malay cuisine.
• Learned to use Nonya cooking equipment and methods.
• Prepared spices and typical ingredients for the dishes.
• Cooked a variety of spicy, nutritious meals.

Other Information

Please bring an apron, tea towel, sharp chef’s knife, container, pen & paper, a plastic sleeve to keep recipes & bottle opener if drinking wine.

Leichhardt Campus, Sydney Secondary College (formerly Leichhardt High School) is located on the corner of Balmain Road and Moore Street West. Entry via Derbyshire Street. Onsite parking very limited, some street parking available. (click on venue below for directions)
